Real Ale in Spain?!? Gute Reise!

In the meantime, could someone point me to a source of info on cask priming? Specifically, whether and how they're primed differently for sparkler use in the North? How much gassier is Northern ale to begin with?

I've googled around a bit with no luck.

Not Spain. You won't find anything. Northern beers are not "gassier" but brewers know that a vigorous secondary fermentation is a good thing for desirable outcomes. It is all about cellaring the beer properly. Why so much over vented and flabby beer is found in some Southern places is beyond me.

This would take too long.

I am not aware of any difference between priming northern as compared to southern beers.

I believe most brewers rely on the residue sugars for cask conditioning and add no extra. This is what I do. I agree with Tandleman that it's more down to cellaring practice than anything else.

Hey, hey! Prompt responses from the two brewers whose pubs I'm probably MOST keen on trying out someday! Cheers.

FWIW, the question arises from an email discussion I've been having with people who, while not (pro) brewers themselves, have quite a bit more experience than I do. I'll post a bit more --including my reasoned, sober impressions from discovering real ale in the North and South after years of drinking "cask conditioned" ale in Orygun-- here later, unless you lot suggest a better place to do so...right now I've got to run. To the Bierkeller, actually, if the weather today holds. (Unfortunately the Kellerbier at this particular place is gas-driven.)

Are there any other opinions or knowledge on this out there to share?

Well Erlangernick, it would be a pleasure to see you. I would have to say that BUL180 is a better pub than mine owing to the fact that he stole all my ideas and then made them better....

I'm sure Tandleman would not object to beer type discussions on his blog whilst he's sunning himself in some sunny clime.

Mind you, don't think about him lying in his boxers on a sun lounger, you'll have nightmares...
